We went to the town of Cineto Romano, very close to Rome, to taste one of its typical dishes. In fact, right in Cineto, both in homes and in restaurants and taverns, sagne or fettuccine are prepared using spelled flour, seasoned with a simple tomato and garlic sauce and, you can’t miss it, a sprinkling of grated pecorino romano cheese.

If you have the opportunity, we recommend that you enjoy this dish sitting at the outdoor tables, perhaps with a breeze that makes that moment pleasant. Don’t forget a good glass of red wine and chat with the villagers who are always ready to tell you something beautiful about their country.
